2 heads garlic
1 Tbl. olive oil
4 lbs. baking potatoes, peeled and cut into 1-inch pieces
1/2 cup butter or margarine
1-1/2 tsp. salt
1/2 tsp. pepper
1/2 to 1 cup milkTrim the tops off the heads of garlic and place each one on a square of foil. Drizzle with oil and wrap in foil. Bake at 425 degrees F. for 30 minutes. Set aside to cool. Boil potatoes 15 to 20 minutes, until tender. Drain and transfer to a large mixing bowl. Add butter, salt, pepper, and enough milk to get the consistency you like, and beat with electric mixer until fluffy (don't overbeat). Squeeze the cloves of garlic from the peels and beat into the potatoes.
