Peanut Butter Cookies

(from the kitchen of Evelyn McGhee)

1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs, beaten
1 cup peanut butter
3 cups flour
2 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla

Cream together shortening and sugars. Add eggs and mix until smooth. Mix in peanut butter. Sift flour once before measuring, then again with soda and salt. Add to peanut butter mixture. Add vanilla and blend. Form into balls the size of a walnut and place on a greased cookie sheet. Flatten with a fork, making a waffle pattern. Bake at 375 degrees F. for 12-13 minutes.
