Peachy Pork Picante

1 lb. boneless pork loin, cubed
1-1/4-oz. package taco seasoning
cooking oil
1 cup salsa
1/4 cup peach preserves

Toss pork cubes in taco seasoning to coat. Heat a little oil in a skillet over medium-high heat and brown the pork. Stir in salsa and peach preserves, lower heat, and cover. Simmer gently for 15 minutes, stirring occasionally. Serve with rice. Serves 2-3.
