Deep-Dish Peach Pie

(from The Fannie Farmer Cookbook)

pastry for a 10" deep-dish pie
2 Tbl. fresh-squeezed lemon juice
6 cups peeled, pitted and sliced fresh peaches
1-1/4 cups sugar
1/8 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
3 Tbl. flour
4 Tbl. butter or margarine

Prepare the pie crust (top and bottom) as directed. Sprinkle lemon juice over peaches in a large bowl. Mix together sugar, salt, cinnamon, nutmeg, and flour and add to peaches, tossing until they are evenly coated. Pour fruit into pie shell. Dot with butter. Cover with top crust. Cut five 1" slits to allow steam to escape. Mask edges with strips of foil. Bake at 450 degrees F. for 10 minutes, then reduce heat to 350 degrees F. and continue baking for 20 minutes. Remove foil and bake another 10 minutes.
