2 quarts apple cider
4 3" cinnamon sticks
1 Tbl. whole cloves
1 tsp. ground ginger
10 whole allspice
6 pieces orange peel, sliced about 3" by 1/4"
1 quart rumCombine all ingredients except rum. Bring just to a boil in a large pot and lower heat immediately. Cover and simmer 30 minutes. Cool and strain. Cover and refrigerate overnight, or up to three days.
To serve, reheat and add rum. Serve in mugs, garnished if you like with a curl of orange peel. Serves 20-24.
