2 potatoes
1/4 cup onion, chopped very fine
1-2 cloves garlic, pressed
1 Tbl. olive oil
pinch of chili powder
canola oil, to grease baking sheetCut potatoes into 1-inch cubes. Toss with chopped onion, garlic, olive oil, and chili powder. Lightly oil a baking sheet and spread the potatoes in one layer. Bake at 475 degrees for 15 minutes, turn and bake another 10 to 15 minutes until golden.
